School is back in full swing and the days are filled to the brim with after school sports, practices and more. With the start of school comes busy and chaotic mornings that could lead to grabbing a biscuit on the go or skipping breakfast all together. Many studies have shown that children who consume breakfast daily have a better performance in school. Waking up early to cook breakfast each morning can add more time and stress to your day, but planning ahead can be the key to success.
Making breakfast for the week during the weekend can save time throughout the week. With these easy egg bites, you can change your toppings to your kids preferences. You can even have your kids help add their favorite toppings and get involved in the cooking. Kids are more likely to try something if they were involved in making them. The recipe below is a base, but some delicious combinations are also provided to give a try. You can make these ahead of time, store in the refrigerator or freezer and heat them up to take on the go.
Easy Egg Bites
Yield: About 12
- 6 eggs
- ¾ cup of cottage cheese
- Salt and pepper to taste
Flavor suggestions:
- Mozzarella cheese, spinach and diced tomatoes
- Bacon bits, sliced green onion, cheddar cheese
- Shredded hash browns, diced red pepper, cooked sausage and cheddar cheese
- Broccoli, diced ham and cheddar cheese
Directions:
- Preheat oven to 350 degrees
- Line muffin pan with cupcake lines and spray with nonstick cooking spray
- a silicone muffin mold makes for easy removal
- In a blender, blend together eggs, cottage cheese, salt and pepper. Blend until smooth
- Chop and prepare toppings of choice
- To each muffin cup, add your toppings
- they do not have to all be the same; have your kids add their toppings of choice!
- Pour egg mixture over toppings until they are covered (about 3/4 the way up)
- Bake for 15-20 minutes or until fully cooked
