Today is Halloween! So why not celebrate the holiday by swapping out bell peppers for pumpkins in this tasty stuffed pumpkin recipe?
Makes 4 servings
- 4 small pumpkins
- 1 pound ground turkey
- ½ teaspoon garlic salt
- ½ teaspoon pepper
- 1 cup wheat crackers
- ½ cup diced onion
- 1 cup spinach
- Preheat the oven to 350°F. Cut the top off the pumpkins, remove seeds and pulp, and wipe clean.
- In a large bowl, mix all other ingredients together and divide among the pumpkins. Bake for 1 hour, or until the turkey is cooked through. Serve in the pumpkins.
