Bright and Cheery Carrot Raisin Salad

While we can buy carrots year round, it is always a pleasure to buy newly harvested carrots from farmers markets. They tend to be small and tender and so sweet. We expect a carrot to always be orange, but they can be red, white, yellow or purple.

Most carrots are orange because they are rich in the antioxidant beta carotene. One large carrot has about 31 calories and has at least small amounts of most important vitamins and minerals. It has little protein or fat, but provides 7 grams of carbohydrate and 2 grams of fiber.

For the best taste, look for small, slender carrots that are firm and without any splits or discolorations. They can last several weeks if stored in a plastic bag in the refrigerator.

Try the following recipe for a different way to eat carrots.


  • 1/3 cup light mayonnaise
  • 1/3 cup non-fat plain yogurt
  • 1 teaspoon sugar
  • 2 large carrots, grated
  • 1 cup pineapple tidbits, drained
  • 1 cup raisins


  1. Mix the mayonnaise, yogurt and sugar together in a medium bowl.
  2. Add the carrots and pineapple and mix well.
  3. Blend in the raisins.
  4. Serve immediately. If the salad sets for a while, you may have to re-stir in the yogurt that may separate.

Makes six servings.
