Ingredients

  • 1lb. salmon cut into cubes
  • 2 cups of seafood stock
  • 2 tsp. minced garlic
  • 2 tsp. ground black pepper
  • 1 cup of water
  • 12 oz. fettucine pasta
  • 1 pack baby spinach
  • 8 oz. sun dried tomatoes
  • 1 cup of feta cheese
  • 2 tbsp. dry chopped parsley
  • Cooking spray

Spices

  • 1 tbsp. seafood seasoning
  • 1 tbsp. garlic powder
  • 1 tbsp. garlic salt
  • 1 pinch of onion powder
  • 1 tbsp. lemon pepper seasoning

Directions

  1. Sprinkle 1 tbsp. of each spice: Old bay seasoning, garlic powder, onion powder, lemon pepper over salmon and toss these salmon bites over salmon evenly.
  2. Heat skillet over medium-high heat and grease it with cooking spray.
  3. Place salmon bites in a heated skillet and cook 4 minutes on each side.
  4. In the same pot/skillet used for the salmon; add 2 cups seafood stock, 1 cup of water, 2 tsp. minced garlic, 1 tsp. ground black pepper in the same skillet and bring it to a boil.
  5. Add fettucine pasta once the water begins to boil, reduce the heat the medium low heat and cook covered for about 10 minutes. Uncover pasta, add a bag of baby spinach to your pot, cover the pot with a lid and allow it to cook for 5-10 more minutes.
  6. Drain extra seafood stock, then add sun-dried tomatoes and cooked salmon.
  7. Add feta cheese and garlic salt to taste, then stir to bring all the flavors together.
  8. Drizzle lemon juice, ground black pepper, garlic salt, and chopped parsley on top.
